We are very pleased to announce that our Texas farmstead goat cheese is back on the shevles of your favorite Whole Foods Markets in Dallas.  Be sure to visit the following for our fine selection of artisan cheeses: Whole Foods Market 2218 Lower Greenville Ave. Dallas, Whole Foods Market 4100 Lomo Alto Drive Highland Park, and  Whole Foods Market 11700 Preston Rd.

Dallas City Market in the Pavillion Shopping Center on Lovers Lane in Dallas will have our cheese in Mid April.  Please stop by and ask for our Chevre, Suave Supreme, and Feta.

Parigi Restaurant and Lakewood Country Club in Dallas are now serving our fabulous cheese. 

Our seasonal lull in milk production is over.  Newly freshened goats are producing again and milk and cheese is readily available in markets, at the farm and Dallas Fort Worth area restaurants (see "Find our Products Here).

Goat Cheese Flautas

Ingredients:

4 ounces La Cuesta Farm Chevre*
2 ounces grated cheddar, jack, or queso fresco
Medium bunch fresh cilantro (rough chop)
leaves from 5 or 6 sprigs fresh oregano
one clove garlic ( coarsely chopped)
one roasted green chili (New Mexico or Aneheim)
* (When available substitute La Cuesta Farm Flame Roasted Green Chili ‘n Garlic Chevre for our plain chevre and omit chili here)
8 white corn tortillas
¼ c corn oil
Cast iron skillet

Directions:

Combine all but tortillas and oil in a small food processor and blend to combine.

Wrap tortillas loosely with clean kitchen towel and microwave for 45-60 seconds. Remove from towel one at a time and spread 4-5 tbsp of cheese mixture on one end of the tortilla. Roll tightly and place in pre heated oil (medium high) with flap down. Brown to light golden brown and turn until all sides are golden. You want a light and tender crunch with the tortilla.  Place on plate to drain excess oil.

Repeat.

Makes 6 -8 flautas
