"Fusion" a rich chocolate and goat cheese confection is now available on a very limited basis.  This mouth-watering treat has been months in development and we have been guided to perfection by some of the finest chefs in the area.

Goat Cheese Flautas

Ingredients:

4 ounces La Cuesta Farm Chevre*
2 ounces grated cheddar, jack, or queso fresco
Medium bunch fresh cilantro (rough chop)
leaves from 5 or 6 sprigs fresh oregano
one clove garlic ( coarsely chopped)
one roasted green chili (New Mexico or Aneheim)
* (When available substitute La Cuesta Farm Flame Roasted Green Chili ‘n Garlic Chevre for our plain chevre and omit chili here)
8 white corn tortillas
¼ c corn oil
Cast iron skillet

Directions:

Combine all but tortillas and oil in a small food processor and blend to combine.

Wrap tortillas loosely with clean kitchen towel and microwave for 45-60 seconds. Remove from towel one at a time and spread 4-5 tbsp of cheese mixture on one end of the tortilla. Roll tightly and place in pre heated oil (medium high) with flap down. Brown to light golden brown and turn until all sides are golden. You want a light and tender crunch with the tortilla.  Place on plate to drain excess oil.

Repeat.

Makes 6 -8 flautas
