La Cuesta Farm
began with a single freshened goat. Its milk was used to raise an orphaned
calf. A forgotten love of animals was reborn in Alberto Garza who had recently
rediscovered his country roots by leaving Dallas with partner and manager
John Spanogle. Soon another goat was added, then another. Alberto began
making queso blanco, reflecting on childhood memories of his grandmother’s
process while living in Mexico. The goat herd grew along with the knowledge
of animal husbandry, milk processing and cheese making.
The name, La Cuesta, loosely translated means "in ones care".
It epitomizes the love and respect we have of our land and the animals we
raise.
Each one of our goats is called by name and treated as family. We believe
that a contented goat produces better milk.
A quality dairy must have healthy animals. Each of the animals in our small
herd receives special attention to health and nutritional needs. While availability
and costs are prohibitive for certified organic supplemental feeds

and minerals, we utilize natural
and organic resources to the extent practical. If needed, we use only natural
pesticides and herbicides wherever our goats have access and we strive for
a natural approach to animal health. In accordance with state regulations,
all milking does are tested for tuberculosis and brucellosis annually.
All of this assures safe, clean, healthy, and happy goats and, in turn,
safe and delicious milk products for our customers.
Our Hours: Normally 9am to 5pm Thursday through Tuesday - closed Wednesday.
